Easy to Make Vegetarian Stir-Fry Recipe (2)

This morning I spent some time online checking out the VH Sauces website and picking out my favorite sauce for our Sunday lunch meal. I decided to plan a Vegetarian Stir-Fry using their VH Szechwan Sauce as a cooking sauce. Stir-Frys are quick and easy to prepare and they taste great. Perfect for Sunday lunch!

I went to my local Superstore to pick up the ingredients while my son was taking his morning nap. I was able to go to the store and back and he was still sleeping! I love quick shopping trips. Below is the recipe for the Vegetarian Stir-Fry Recipe I made for lunch. This is my own recipe but you can always change/add your own favorite ingredients, that’s the great thing about Stir-Frys.

This Stir-Fry was fast, easy to make and the VH Szechwan sauce was fantastic. The meal was a big success, my husband and I loved it and even our 22 month old enjoyed it!

Yield: 4

Stir-Frys are quick and easy to prepare and they taste great. This one is delicious and easy to make!

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 1 medium onion, diced
  • 2 cups of extra firm tofu, diced
  • 1" of ginger, finely chopped
  • 3 cups of mixed vegetables (frozen vegetables if you don't have fresh vegetables)
  • 1/2 bottle of VH Szechwan Stir-Fry Sauce
  • 1 cup of brown rice

Instructions

  1. Cook brown rice following the directions on the bag.
  2. In a large skillet on medium-high temperature, heat olive oil over medium-high heat. Stir in onions and cook for one minute until soft. Stir in garlic and ginger, and cook for 30 seconds.
  3. Stir in vegetables and cook for 8-10 minutes.
  4. Stir in Tofu and cook for 2 minutes.
  5. Add VH Szechwan Stir-Fry Sauce, mix well and simmer for 3 minutes.
  6. Season to taste with a little bit of salt, pepper and a bit of soya sauce too if you wish.
  7. Serve over the brown rice.

    I have never used that particular VH sauce but I love their dry garlic one with ribs. I just pour 2 jars over ribs and cook them slowly in the oven and they literally melt in your mouth. My entire family loves to have stir fry for dinner. The recipe sounds great and looks even better (great job on the photos!). The only thing that would worry me about the VH Szechwan sauce is that it sounds a bit spicy/hot. I don’t mind a touch of spice but if it burns my mouth at all, I don’t really like that…You said that your 22 month old enjoyed it so I assume it was not spicy. Thanks for sharing!

      Hi Jeannette, thanks for the comments. To answer your question, the VH Szechwan sauce is not spicy at all 🙂 Definitively not a hot sauce.

      That’s how I feel. I’m still new with transitioning into being a Vegetarian. I was looking for a recipe using Tofu I wanted to try. I think this will be my first.

    I love making stir fries, so easy and healthy if you use the right ingredients that is…the VH Szechwan Sauce is so good isn’t it. I have to admit though I don’t like Brown rice at all…lol. so white rice for me..

    This looks really good! Is it really spicy? I love Szechwan sauces, but they usually aren’t thay spicy/hot.

    Thanks Angela!! I started my diet exactly today … and last night I was searching the internet for meals with tofu in them. I have never tasted tofu, but I heard that with the right recipes it can actually taste delicious! This recipe is a God-send, it looks delish and I cannot wait to try it!

    This is exactly the kind of meal that I need to help me eat healthy and well just to make sure I eat! I love stir-fry, but honestly can make it on the not too healthy side at times. With the warmer months comes lots of fresh veggies and I can imagine a lot of variations to this recipe!

    I love a good stir fry but I’m more of a sweet and sour type than Szechwan type, especially since reading up on the sauce and learning that there’s chili pepper in it and I can’t eat that. I must add that I do find things spicy when others think it’s not – I must have sensitive taste buds eh? 😀
